It's anyone come up with a solution yet for removing a double seat and putting a single seat in now trying to get rid of the airbag faults on a 2025 plate

Try taking the complete harness, belt receivers and occupancy sensors from the double. Fit the one pair occupancy sensor and associated belt receiver into your single seat and tie the other pair up under the seat.
